Introduction : Licorice candy has a flavour similar to anise, and tastes simultaneously sweet and medicinal, with a somewhat bitter and salty aftertaste. When chewed on its own, it seems to taste increasingly sweeter. The glycyrrhizic acid contained in Licorice extract provides the sweet flavour, and also has anti-inflammatory and anti-viral properties. |

Making process : The Licorice root is harvested between October and March; it is first washed and dried. Then peeled, grated and boiled in water. The thick, glutinous unprocessed Licorice mixture is then ready for processing. Depending on the type of finished candy, various ingredients, such as sugar, flour, gelatine, vegetable gelling agents, sal-ammoniac, herbs and flavouring are added to create hard and soft Licorice, Licorice drops, confectionery, pastilles and combination products.
